Oenology - Adelaide UniversityAfter several years working in fine dining restaurants in the 1990s, I had an epiphany after tasting a great red Burgundy- a 1983 Armand Rousseau Chambertin Clos de Bèze. "I had to know how that wine was made and I wanted to try and create something as sublime". This led me onto a career that spans from the Adelaide Hills to Barolo and Burgundy. I spent four years as a winemaker and vineyard supervisor with renowned biodynamic producer Domaine de Montille. This domaine has some of the most enviable 1er Cru and Grand Cru sites in the Côte de Nuits and Côte de Beaune. My skills and understanding of ultra fine wine production were put on a another level with this experience. I returned to Australia as chief winemaker at Best's for a decade and more recently Fallen Giants, Dhiaga and Stonier. I take great pride and joy in making wine for people and helping others in their winemaking journey. Along the way I have collected two Jimmy Watson trophies and two Halliday "Wine of Year" awards, but I know the best wines I will be involved with are yet to come...
